
Here it is boys!!!
2 cups all purpose four
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
3-4 mashed ripe bananas (recipe calls for one cup but the hubby uses extra and that's okay with me!)
1/3 cup milk
1/3 cup peanut butter
3 tablespoons vegetable oil
1 egg
1 bag (the smaller one, I don't remember the size/weight) Nestle's Chocolate Chunks
1/2 cup of brown sugar
dash of ground cinnamon
Preheat oven to 350 degrees. Spray bottom only of a stoneware loaf pan with nonstick cooking spray. In a large mixing bowl combine flour, sugar, baking powder and salt.
Combine bananas, milk, peanut butter, oil and egg in another mixing bowl. Add dry ingredients mixing just until moistened.
Stir in about half of the chocolate chunks. Spoon batter into pan.
Sprinkle remaining chocolate chunks evenly over the top of the batter.
Sprinkle brown sugar and cinnamon over the top of the chocolate chunks.
Bake for approximately 60 minutes or until knife inserted into center comes out clean. Allow to cool completely and remove from loaf pan. Slice, serve, and enjoy!
OPTIONAL - you can also sprinkle chopped peanuts in addition to or instead of the brown sugar and cinnamon for extra peanuttiness.
Also, if you've got a favorite candy store that sells chocolate chunks, feel free to use them instead of the Nestle's. We have Krause's in Albany and their chocolate is absolutely perfect for this recipe!

Nevertheless. I'll be making this soon--I haven't baked since I moved out here and I'm feeling the itch to get back into the kitchen.
