I'm trying to learn from text since pictures don't help me. Unfortunately, the texts aren't detailed enough to satisfy me so I'm looking for knitters who are willing to get down to gory details with me.

you should check out the knitpicks podcasts (and podcasts in general) because many of those will talk you through techniques - and the most recent knitpicks does a great job of explaining the process of wrapping and turning...
Oh, I'm so sorry... I didn't see the part where it said you were blind. But actually maybe even finding a good video and listening to the person explaining it could help.
