Try Don's Vest from Latvian knitting. It's only 2 colors and it's pretty easy. That was MY first fair isle. Plus it's a vest, so no sleeves for a beginning project. you can see it on my blog or ravelry page if you want. I'll post it on here too.
I have not attempted fair isle yet, but have checked out Alice Starmore's book of Fair Isle knitting from our library several times. I think i remember it being very detailed with information on the technique, tips and patterns.
