I have to go with "no deadlines" - unless I am extremely under pressure to finish something. Luckily, my family and friends know that they may get a handknit goodie as a gift, just not when nor for any specific occasion. -- Books, knitting, cats, fountain pens...Life is Good.
I'm right there with you. Giving away hand knit stuff at Christmas is always so stressful for me... Did it one year will never do it again. I do have a gift stash, though. All the the things I end up making for sport, and not really intending for anyone go into it (I'm such a process knitter, that way!).
I'm with Kerry - I've discovered I need to keep my projects free from deadlines to enjoy them. (Not enjoying a project makes me far less likely to finish it.)

Ditto! Trying to adhere to a deadline, even the ones which are self imposed, is the most effective way of sucking the enjoyment out of my knitting.
