I just finished a really easy bear that is in the book "the Knitted Teddy Bear"
You knit up five rectangles in garter stitch. A large one that becomes the head and the body. Two for the arms and two for the legs. The ears are made by wrapping yarn around the corners of the large rectangle and the head by wrapping yarn to make a neck around part of the large rectangle. I was amazed how good the finished guy looks. It is a great pattern for beginners.

The one advantage of making each leg a seperate piece is that the sewn on legs are more movable so you can have the teddy actually sit down.
Also, I think it works better to sew the top corners into ears before you stuff the head .
